Pepper Chicken Fry - Kozhi Milagu Varuval

Chettinad cuisine is renowned for Non-Veg dishes.There are many delicious non-veg varieties like  chicken pepper gravy, Kozhi Milagu Varuval,Mutton kola urundai and the list goes on..
          People all over the world remember chettinad with its non-veg dishes. Being from chettinad never made me a meat eater,i am a hard core veggie. Before marriage i used to run away from the place where chicken is getting cleaned and is cooked.Mom used to cook for me first, before making chicken.Now things changed ,after marriage or its after my kid started eating chicken.I cook pepper chicken fry for them once in a while.

        Pepper chicken fry means not literally frying the chicken.The name is because chicken gets the coated with the spice from pepper.When you add pepper at last you get the taste of pepper ,chicken won't taste too spicy.This chicken fry can be real treat with rice or roti for lunch /dinner.

 Cuisine: Indian/Chettinad   Category:Side  Serves:2-3   Prep time:40 minutes(including marination) Cook time:30 minutes  Total Time:1 hour 10 minutes

Ingredients:

  • 3/4 kg skinless boneless chicken.
  • 1 large Onion(chopped fine).
  • 1 large Tomato(chopped fine).
  • 1/2 tsp ginger garlic paste.(optional)
  • 1/4 tsp of Chili powder/ Chili Chicken masala powder.
  • 1/2 tsp pepper powder(adjust).
  • A pinch of turmeric.
  • Salt as required.
  • 2 tbsp oil.

To marinate:

  • 2 tbsp Curd (can use Lemon Juice instead )
  • 1 tsp Chili powder / Chili Chicken Masala.
  • 1 tbsp ginger garlic paste.

To Temper:

  • 1 cardamom
  • 2 cloves.
  • 1 inch cinnamon.
  • few Curry Leaves.

Method:

  • Cut the chicken in to 1 inch pieces
  • Add the items in "To marinate"  to a bowl and mix well.
  • Mix the Chicken with the marinade and let it marinate at least for half hour.
  • Add oil to a hot saute pan.
  • Add items "to temper" and add onions and saute until translucent.
  • Add tomatoes and cook them until soft.

  • Add the marinated chicken and cook the chicken in a medium low heat covered.
  • Add salt and Chili powder when the chicken starts to release its juices.
  • Now cook the Chicken uncovered until all water gets absorbed.
  • Once all the water gets absorbed add the ground pepper.

  • Mix well, cook for 2 minutes or switch off and cover the curry.
  •  Pepper Chicken Fry is ready to be served.
  • Serve with Roti, Chapati, Rice and even tortillas.

Note:

  • You can let the chicken marinate overnight.Next day all the spices has coated the chicken.
  • Cook in medium low heat till all the moisture gets absorbed before adding the ground pepper.
